The actual manga isn't that bad but I didn't like the adaptation at all, especially since the story isn't all that.

It isn't much of anything, really. It's just bland and unmemorable, and the MC is more or less literally a Sue (even if she's not really a Mary Sue). I don't like it. A lot of the ways she wins later on don't even feel somewhat believeable like the one here, they rely mostly on the opponent being a complete idiot.

Fine, let's talk about why Kakegurui is shite.
1. Mary Sue MC, where the entire school seems to exist to show how badass she is, except she's not entertaining like Akagi. She also more than once seems to draw a near-infinite supply of funds from who-knows-where in order to win the bet, and the one time she doesn't have more money than the other side, the other side goes full retard.
2. Anime doesn't really do the manga's artstyle, its main draw, justice.
3. The actual MC seems to be…entirely worthless? What's he there for? Is he there to be Watson? But he doesn't even serve that purpose, anyone else would've done?
4. The entire tone is annoying, who actually thinks the way she does? Who sympathizes with her? The story feels like some sort of self-insert power fantasy where you've got a school of elites, and newcomer comes and just sweeps the entire school.
I uh, haven't actually watched this, but at least the art style is good, right?

How is he not filling the Watson role? He's obviously an anchor of normality, a lense through which the absurd can be filtered, a standard against which the outstanding can be compared. His role is classic Watson. What's so unlikable about that?
Absurdity in storytelling isn't such a bad thing. Who actually thinks the way Donald Trump thinks, or Hillary Clinton? Even if such people are not really so strange, is there no storytelling value to exaggerating their qualities? Plenty of classic stories have over-the-top characters, who take an idea to its limit. The girl is not normal, I don't see how that's a mark against this show.
And what's the idea with calling her a self-insert Marry Sue? Who is supposed to identify as her? Ultra-rich gambling addicts? The complaint about Marry Sues in fiction is boring, I'd much prefer a character who can accomplish something in their own ridiculous way, especially in a show like this where it fits the tone of largesse and vice.
Complaints about the art can't really be argued. I happen to love this style, but maybe the manga looked better and could have been followed more closely. Your taste is fair enough.
If you even once felt like Re:Creators could have been good, yet hate a show like this, you truly are a pleb. A plebby pleb shouldn't bully heroes like icicle.

Because the problem is, he's not needed here. Everyone around her is amazed by her ability and her incredible luck. There is no reason for his existence, if you need an anchor of normality then everyone else in the school who's simply trying to scrape by works perfectly fine. Watson was needed as someone for Holmes to say "it's elementary" to, but there is no reason for Watson to exist here because, as in most manga, it's perfectly possible for the defeated to ask "B-BUT HOW COULD I HAVE BEEN DEFEATED, TELL ME YOUR SECRETS MC-KUN".

But it is if the absurd becomes ridiculous. The original Sherlock Holmes may have been absurd, but it was not ridiculous, the logic was sound and Holmes didn't seem to pull shit out of his ass like the main character will do.

That's not what I called her, I called her a self-insert power fantasy. She doesn't actually have a strong presence in her actions beyond being insanely good at gambling and drawing funds from quantum wormholes. She doesn't really have a backstory at all as of the fight with the President. She just shows up out of the blue and cleansheets fucking everyone except that one time where she lost and it didn't seem to matter anyway, because, well, she actually has a shiteload of money and infinite debt is not an actual issue to her.
But I can explain why I called her a Mary Sue. She doesn't accomplish things in her own way. She accomplishes things in the author's way. The woman feels like a DMPC. There is no actual challenge to her. There is no risk nor attachment. The stakes are nil and the scope is irrelevant, and the gambling itself is not decided in normal fashion after the admittedly brilliant debtor trade arc, unlike say Akagi, where despite the fact that Washizu Mahjong isn't actual mahjong, there is no reliance on opponents going haywire to win except for the end of that huge arc, where the takeaway is "Both Washizu and Akagi are eternal winners, and both of them won that day". Nor is it like Koizumi, where the very premise of the manga is in its absurdity and you have Putin bring a chainsaw to the table and robot Kim Jung Un. You see, Mary Sue doesn't mean someone who always wins. Mary Sue means someone who is always right. Look at Medaka Box, where it's all but spelled out why Medaka is a Sue - not because she's a winner but because she's the Main Character. She does what you do, but she does it better. She does what she does, which you can't do. She has everything and wants for nothing. She's always right, and when she's wrong, she's at least more right than everyone else. That's what a Mary Sue is - a DMPC, and I don't know what she feels like if not a DMPC whose purpose is to come in, steamroll everything, roll out.
